Easy Vegan Nando’s Style Pitta
Nando’s is very popular in the UK, I visit regularly but mainly for the chicken! Today I am going to try a Nando’s style dish and make it Vegan. I'm not a vegan myself but I thought it would be interesting to try a recipe that is a healthy take on a popular chain's meal.
Ingredients:
x 2 Pitta Bread
Terra Vegan Seitan Strips
x 2 tbsp Olive Oil
Salt & Pepper
x 2 tbsp Lemon Juice
Salad Leaves
Sliced Red Pepper
Vegan Mayonnaise
Peri-Peri Sauce
Method:
Open the Seitan strips and coat them in the Peri peri sauce to marinate.
Preheat 2 tbsp of oil. Fry the Seitan over a medium heat, turning frequently. Season with Salt and Pepper.
Add the sliced pepper to the pan and cook for around 5 minutes.
Remove the seitan and sliced peppers from pan into a bowl or container. At this point, stir in the lemon juice.
Then in a small bowl, stir some peri peri sauce into the vegan mayonnaise to make a ‘perinase’ spread.
Heat the pitta up for a couple of minutes in the pan – once the pitta is open, remove from pan and cut it in half. Spread the ‘perinase’ sauce on the inside of the pitta then add seitan and peppers.
Last step, add some salad to add a bit extra. Then it’s done!
